Food and Drink Paradise – Tea Party
Do you have any new idea for a Wedding tea party or Birthday party? Are you looking for one?
One student, Judy, was asking a cooking class teacher, whether she could give some advice and provide her some simple recipes for her up coming tea party.
This is her first time organizing such a great gathering. She had never attended a wedding and Birthday party before. She had no confidence at all. Moreover, this is only her second cooking lesson.
“Well, I have to help her. I love to give her all my support”!
The teacher said to the class.
She started first with cocktail.
Grapefruit Cocktail
Ingredients
1 grapefruit (peeled)
1 egg white (beaten)
1 teaspoon sugar
50 ml sherry wine
1 cherry
Action
a. Slice the grapefruit, remove the seeds, and extract the juice.
b. Pick a pretty glass, apply first the egg white, then the sugar, around the edge.
c. Mix the juice with sherry wine.
d. Pour it into the glass carefully, without touching the edge of the glass.
e. Garnish with a cherry.
“Is this simple and amazing? All of you should be able to make it.” The teacher said to the class.

Prune Butter
Ingredients
10 Prunes
2 teaspoons lemon juice
1 tablespoon corn syrup
100g nut meats (chopped)
1/4 teaspoon salt
Action
a. Wash and soak the prunes in water for 5-6 hours, before cooking.
b. Cook slowly until very tender.
c. Sweeten with corn syrup just before removing from fire.
d. Remove stones and rub prunes through coarse sieve.
e. Add lemon juice, salt, and chopped nut meats.
“Girls, this is enough for 30 small sandwiches”. The teacher, Mary said.

Food and Drink Paradise – Sugar Free Desserts Challenge!
Are you looking for a new challenge? How about creating some easy and delicious dessert recipes for the special diet people? Some sugar free recipes ideas will be great. A project was given to a group of new students in an cooking class. Vanessa is the organiser for this project. She told the class to sit down and start a brainstorm exercise over this topic.
After an hour, came a young lady with some wonderful sugar free dessert recipes.
“Class, stay quiet!” Vanessa said to the class. “Shall we see what she has created for us?”
Boiled Custard
Ingredients
250g dates
500 ml milk
1/8 teaspoon salt
Action
a. Cut the dates into small pieces.
b. Add milk and salt.
c. Cook it in a double boiler for about 1 hour, till thick.
Coconut Pudding
Ingredients
200g desiccated coconut
250g dates
1 egg (well beaten)
500 ml milk
Action
a. Stone dates and fill a shallow pudding dish with alternate layer of coconut and dates.
b. Add egg and milk and pour this over the coconut and dates mixture.
c. Bake in 180°C oven for a nice brown.
Date Cream
Ingredients
500g whipped cream
250 ml milk
1 tablespoon gelatine
200g ground dates
Action
a. Soak gelatine in half of the milk.
b. Whip cream stiff.
c. Boil remaining milk and add gelatine.
d. Let cool, then beat till it begins to thicken.
e. Stir in whipped cream and mix well.
f. Pour into a mould and serve with whipped cream heaped around.

Food & Drink Paradise-Desserts Paradise
Preparing an Indonesian layer cake is not too difficult. Although you see many ingredients involved. When you summaries it, you should be able to make it. No problem at all!
Are you ready?
Let’s go……
Ingredients A
35g all purpose flour
1 tablespoon walnut (powdered)
1.5 teaspoon five spices powder
Preparation
Combine and sift all together.
Ingredients B
150g butter
40g cane sugar
65 ml sweet milk
Preparation
a. Melt the butter under room temperature.
b. Add sugar to the butter, and beat till fluffy.
c. Add milk and beat until creamy white.
Ingredients C
6 egg yolks
1/2 tablespoon rum
Preparation
a. Stir egg yolks into the B mixture, one at a time.
b. Lightly mix in rum.
Ingredients D
20g sugar
3 egg whites
Action
a. Beat egg whites, and sugar together until stiff.
b. Add this and the flour into the B mixture, and mix thoroughly.
c. Prepare 2 small square baking pan, grease them.
d. Place 2 tablespoons mixture into it, and bake in a 150°C oven, for 10 minutes.
e. Take out the baking pan, spread smoothly 1 tablespoon mixture on top of the cake.
f. Bake in 200°C upper heat oven, until browned.
g. Repeat this process till last second layer.
h. Adjust the oven to 150°C lower heat, and bake for 15 minutes.

Note:a. You may make a bigger cake, by increasing the volume of the ingredients, when you are familiar with it. b. Some people will add cocoa powder into the ingredients, and they will have an extra aroma from it.
